This Week I Made:
Chocolate Muffins with Coffee and Peanuts
So I realize these look more  like cupcakes than they do muffins. There’s a very good reason for  that…I used a cupcake tin with cupcake liners instead of a muffin tin because well…it’s less to clean up.
Anyway, this time I used coconut oil instead of regular oil, which smelled divine and added just a tiny hint of coconut flavor.  I then substituted almonds for the peanuts because well, they were there and almonds just sound classier. Tasted pretty good too. Unfortunately, they don’t look as exciting as the peanuts do in the original recipe. I’m wondering how she got her muffins to look so rich and chunky. I’m thinking either I overmixed it or maybe it needed an extra cup of nuts since the chopped almonds were so small.
